Crispy Roasted Chickpeas

Craving chips at 3 p.m.? Turn one can of chickpeas into a smoky, crunchy snack with olive oil, paprika, and one simple trick: let them cool before you dig in.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika

Method

  1. Heat the oven to 400°F (200°C).
  2. Drain and rinse the chickpeas, then pat them thoroughly dry.
  3. Toss with olive oil and smoked paprika.
  4. Roast for 25–30 minutes, shaking the pan halfway, until golden and crisp.
  5. Cool for 5 minutes—the chickpeas crisp further as they cool.

Why this recipe works

  • Pat the chickpeas genuinely dry — paper towels, rolling them around, the works. Surface moisture is the number one enemy of crisp.
  • Do not crowd the pan. Chickpeas need space for hot air to circulate; crowded ones steam instead of crisping.
  • They get crispier as they cool. Pull them when golden and let the carryover do the final crunching on the tray.
